$25.00 charge is a deposit for your Holiday order. Your deposit will be subtracted from the total price when you pick up your order and the exact weight is known. The total rib is 7 bones, each bone weighing approx. 2-3lbs. Please indicate in the customer comments section of your order what size roast you prefer and we will do our best to accommodate your request.
